I will genuinely be having the talk with my university soon, to find an alternative login method for my Entra ID with them. It's not their fault for this change, of course - but my point is:
No matter what I'm doing, I am not jailing my phone. I. Don't. Care. What. Microsoft. Want.
I suggest you do the same and stand up for freedom with the devices you bought and own.
[ UPDATE! ] What you can do is switch to another authenticator. I use Ente Auth - here's how to switch (if you choose to use a different authenticator instead of Ente, the steps will be similar, but I REALLY suggest Ente as it's end-to-end encrypted):
