It's a similar problem as somnophilia. An awake person can consent to sex, and also think they'll be fine with having it during sleep, but in the moment they won't be able to retract that consent. Same (potentially) with drugs.

Dub con carries the risk that they might not like the experience, and be unable to retract consent. This should not be understated, it's very serious, and your partner needs to decide that the pleasure they believe they could get from the experience outweighs this risk.
You should do this kind of dub con stuff with someone you're really familiar with and trust, because this requires a lot of trust, and you would want to be sure that this trust will not be shattered of it goes wrong. Familiarity may also allow you to spot signs that your partner might not be enjoying the experience, although this is not a fail-safe, but it could help.
In did once drug my partner's coffee, I took the following precautions, among others: - I did this a day after my partner had consented to it. It should still be fresh in their memory. He had also repeatedly expressed this wish in the past, so I knew it was a consistent thing. - I asked about his plans for the day and insistently made sure that he had nothing planned. This also served as a hint that I would drug the coffee, which he did catch on. So actually he slightly saw it coming but wasn't sure. Still, you can never be 100% sure someone will pick up a hint. - I am very familiar with the drug and they have had it before. It's a short-acting drug that shouldn't leave them intoxicated for more than 3 hours. It was also lab-tested. - There were lots of other folks in the house who could watch over him. - And like I said, this is someone I've known for a long time, we're familiar with each other and trust one another.
But yeah, no matter how many precautions you take, you are bypassing safety precautions, so there will always be the possibility that the experience will suck, and this is something that you both need to be aware of and accept in order to mess with consent. This is not safe, but sometimes, dangerous things are fun. Other times, dangerous things will hurt you. You can't guarantee it's gonna be fun so you need to evaluate the risks and decide if it's worth it.
